Why end grain

With end grain, the fibres stand upright. The knife slips between the fibres instead of cutting straight across them. The blade edge stays sharp longer and the block closes back up after every cut. That is why butcher's shops have always worked with it. Even after years, the board shows barely a mark.

Four types of wood, four characters

Oak is hard and darkens beautifully over time. Ash is light with a lively grain. Pear looks calm and fine-grained. Walnut is the darkest choice. All four are oiled and food-safe.

From the workshop

Gluing, planing, sanding and oiling all happen by hand in a Swiss social workshop. People with their own strengths, passions and know-how work on every single block. You can tell from the edges.

Care

Wash by hand with hand-warm water and a little washing-up liquid, then dry it well. Not in the dishwasher, and ideally no microfibre cloth. If the wood goes matt over time, rub in a little linseed oil with a cloth. And if the block shows marks after years of use, we have it sanded and re-oiled in the workshop on request. It will look as good as new.

Ideal for

For everyone who loves to cook and cooks a lot: as a housewarming, wedding or birthday gift for your partner, parents or friends, or as a gift from godmother and godfather. In the kitchen, the solid block is for chopping vegetables, herbs and meat and for carving the Sunday roast. If you entertain guests, it also goes on the table as a serving board for bread, cheese and meat.

Questions and answers

What is end grain, and why does it suit a chopping block?

In end grain the fibres stand upright. The knife goes between the fibres instead of across them, so the edge stays sharp longer and the block closes up again after every cut. That is why butchers have always worked with it, and even after years the block hardly shows any wear.

Which woods are there, and how do they differ?

Four: oak is hard and darkens nicely over time, ash is light with a lively grain, pear looks calm and fine-pored, walnut is the darkest choice. All are oiled and food-safe. Each wood is available with or without feet.

How big and heavy is the chopping block, and how do I care for it?

The block measures 38 × 25 × 4.5 cm and weighs around 3.1 kg. Wash it by hand with lukewarm water and a little washing-up liquid, dry it well and give it a little linseed oil now and then. No dishwasher. After years of use we sand and re-oil it on request in the workshop.
